It is a light and delightful mouth-watering fusion of Mexican flavors with a Texan influence. The foundation of this dish lies in tender chicken breasts that have been marinated in a blend of mild seasonings, including oregano, cumin, chili powder, and a savory garlic sauce. To enhance the flavors further, we sear each chicken breast on a griddle along with sweet peppers, garlic, and red onions. This cooking technique results in an explosion of flavors that will captivate your taste buds and leave you craving more. The combination of smoky, tangy, and mildly spicy elements creates a truly tantalizing experience. To complement the succulent chicken, we serve it on a bed of tender buttered pasta. The rich and creamy pasta provides a perfect balance to the bold flavors of the chicken. We top the chicken breast with a creamed avocado aioli, Mexican cheeses, and garnish of fresh, mild pico de Gallo. This vibrant mixture of diced tomatoes, onions, cilantro, and jalapeños adds a refreshing mild touch and completes the dish with a burst of freshness.

Trays are oven and microwave friendly. 

Microwave: Remove sleeve, lift the corner of film, place on microwave plate, microwave for 2 minutes or until hot, cut film away from corner edge with knife, and remove. Let stand for 2 minutes. Based on a 1100 watt microwave oven. DO NOT LIFT TRAY, LIFT ON MICROWAVABLE PLATE.

Oven: Remove sleeve, cut film away from corner edge with knife, and remove. Place on oven sheet pan. Heat on 350°F degrees for 20 - 25 minutes until hot. Heat to 165°F degrees (Internal Temperature). Remove tray on pan DO NOT ATTEMPT TO LIFT TRAY BY ITSELF. LIFT TRAY ON MICROWAVABLE PLATE OR OVEN SAFE PAN. USE HOT PADS TO REMOVE.

The Chicken was tender and the Penne made this meal delicious.

I enjoyed this dish the chicken was tender.

Unlike the chicken in the Queso Chicken, which was tough. That bird didn't give up the fight in the end either. Tough in life. Tough on a plate.

This was my second favorite dish after the Short Rib Angus Smoked Cheddar Double Burger Platter.
