Our Deluxe Beef Enchilada Casserole is a delicious, hearty Tex-Mex casserole that combines layers of tender beef, a savory sauce, white corn tortillas, grated cheddar, and Monterey Jack cheese. A masterpiece of taste, slow-cooked beef seasoned to perfection with a medley of Tex-Mex spices, a rich, savory sauce layered with white corn tortillas and topped with Mexican cheeses. As the casserole bakes, the top will form a golden layered topping, sealing in the delicious festive dinner that is sure to please even the pickiest taste buds. This casserole is a generous serving for two people.

Trays are oven and microwave friendly. Remove condiments and sauce containers.

Microwave: Remove sleeve, lift the corner of film, place on microwave plate, microwave for 2 minutes or until hot, cut film away from corner edge with knife, and remove. Let stand for 2 minutes. Based on a 1100 watt microwave oven. DO NOT LIFT TRAY, LIFT ON MICROWAVABLE PLATE.

Oven: Remove sleeve, cut film away from corner edge with knife, and remove. Place on oven sheet pan. Heat on 350°F degrees for 20 - 25 minutes until hot. Heat to 165°F degrees (Internal Temperature). Remove tray on pan DO NOT ATTEMPT TO LIFT TRAY BY ITSELF. LIFT TRAY ON MICROWAVABLE PLATE OR OVEN SAFE PAN. USE HOT PADS TO REMOVE.

These homemade beef enchiladas were an absolute hit! Love this!

I crave Mexican food at least once a week and since we can no longer go out to our favorite restaurants, Front Porch Pantry has some good substitutes. This is one of our favorities. The enchiladas are perfactly seasoned (not too hot) and contain lots of corn, beans and tomatoes so we feel that it's a healthy Mexican dish, too!
