Farmhouse Harvest Pot Roast, Sweet Potatoes, Caramelized Carrots and Onions

We start with seasoned chuck roast slow-cooked until it is pull-apart tender. Then serve it over a bed of hand-mashed sweet potatoes alongside candied roasted sweet potatoes, carrots, and onions caramelized low and slow until they are sweet, golden, and full of depth. 

This is the kind of fresh comfort food that works for Sunday lunch, a cozy family weeknight dinner, or anytime you want a real home-cooked meal without any of the effort. Trays are oven and microwave friendly. 

Microwave: Remove sleeve, lift the corner of film, place on microwave plate, microwave for 2 minutes or until hot, cut film away from corner edge with knife, and remove. Let stand for 2 minutes. Based on a 1100 watt microwave oven. DO NOT LIFT TRAY, LIFT ON MICROWAVABLE PLATE.

Oven: Remove sleeve, cut film away from corner edge with knife, and remove. Place on oven sheet pan. Heat on 350°F degrees for 20 - 25 minutes until hot. Heat to 165°F degrees (Internal Temperature). Remove tray on pan DO NOT ATTEMPT TO LIFT TRAY BY ITSELF. LIFT TRAY ON MICROWAVABLE PLATE OR OVEN SAFE PAN. USE HOT PADS TO REMOVE.

This pot roast and gravy perfectly complimented the sweet potatoes, and I found myself mixing them in nearly every bite. Absolutely delicious! I did remove two stars bcz of the carrots, which were inedible. They were undercooked and had a slight chemical taste to them so I just threw them out (I will note that this is my second meal with carrots included and the others were the same so I'll try to avoid meals with them from now on).

My only complaint about the rest of the meal was that the pot roast was a bit too fatty so about a fifth of it was given to the dog. Unfortunately, this made it a one and a half person meal rather than a two person meal and we ended up making something else as well. Good or not, this defeated the purpose of ready made meals and made it no longer worth the money.
Overall, this meal was perfectly seasoned and delicious and despite its flaws, I will likely try it at least once more to see if this time was a one-off.
