Country Oven Fried Chicken Dinner, Mac & Cheese, Southern Collard Greens

Simply put, "southern" describes our oven-baked crispy chicken dinner. We brine boneless chicken breasts, soak them in buttermilk, lightly dredge them in seasoned flour, and pan-fry them in canola oil just to crisp the outside. finish cooking in the oven, and top it with our signature country gravy for a healthy twist on this classic southern comfort meal.  Served with homemade mac and cheese, slow-cooked southern collard greens with ham hocks, and Apple Smoked Bacon. We are so excited to bring this delicious souther comfort recipe to your dinner table. YUM!

Trays are oven and microwave friendly. 

Microwave: Remove sleeve, lift the corner of film, place on microwave plate, microwave for 2 minutes or until hot, cut film away from corner edge with knife, and remove. Let stand for 2 minutes. Based on a 1100 watt microwave oven. DO NOT LIFT TRAY, LIFT ON MICROWAVABLE PLATE.

Oven: Remove sleeve, cut film away from corner edge with knife, and remove. Place on oven sheet pan. Heat on 350°F degrees for 20 - 25 minutes until hot. Heat to 165°F degrees (Internal Temperature). Remove tray on pan DO NOT ATTEMPT TO LIFT TRAY BY ITSELF. LIFT TRAY ON MICROWAVABLE PLATE OR OVEN SAFE PAN. USE HOT PADS TO REMOVE.

Chicken lost its crispy texture during heating it up and the greens are not a favorite. The Mac & cheese was ok, but just ok.

Everything was great. The mac and cheese was fabulous. The collard greens had a great smoky flavor. I would have preferred them cooked a little longer, but that is just personal preference. Some people like them firmer, some more tender. As always, a most wonderful dinner that I didn't have to cook!
