    These eclairs are truly, absurdly, insanely perfect! I had actually never had a real, true eclair but had nonetheless been chasing some of the doughnut shop varieties I had always known as such. Unfortunately, the ones I have found are from different propieters and leave much to be desired. FPP's version is incredible, with a light, flaky pastry encapsulating the comforting Bavarian cream filling, all topped with a thick, melty chocolate icing that probably shouldn't have melted, but did in transit, and was made even better as a result. Hugely successful dessert!
