Chicken Zucchini Enchiladas - Lower Carb

You will love this new dish. Chicken Zucchini enchiladas are a healthy approach to this popular Texas favorite.   This is a fantastic recipe that is low in calories and low in sodium. This recipe serves two.

Microwave: Remove sleeve, lift the corner of film, place on microwave plate, microwave for 2 minutes or until hot, cut film away from corner edge with knife, and remove. Let stand for 2 minutes. Based on a 1100 watt microwave oven. DO NOT LIFT TRAY, LIFT ON MICROWAVABLE PLATE

Oven: Remove sleeve, cut film away from corner edge with knife, and remove. Place on oven sheet pan. Heat on 350 degrees for 20 - 25 minutes until hot. Heat to 165 degrees. Remove tray on pan DO NOT ATTEMPT TO LIFT TRAY BY ITSELF. LIFT TRAY ON MICROWAVABLE PLATE OR OVEN SAFE PAN. USE HOT PADS TO REMOVE.

Delicious but so soupy I had to eat it with a spoon

First of all, like all of their stuff, the flavor of this dish was delicious. However, they weren't enchiladas. It was so soupy, I had to eat it with a spoon. Literally, probably a cup and a half of liquid were in this dish. It got to me frozen, so maybe that's why? Zucchini gets soft in the freezer. I doubt I'll order it again.

Kids love it!!! Wish there is veggie with the pasta version. Also the low carb version, we would love it if it was broccoli (freezer friendly) compared to zuchni
