This new recipe is packed with delicious flavors. Tender brined grilled chicken is topped with a traditional Sicilian antipasta mix made with rich tomato marinara, roasted eggplant puree, black olives, capers, fresh herbs, cherry tomatoes, fresh garlic, green onions, and olive oil. Served over country rice casserole. You will love this dish. (If you are not sure about the eggplant, go for it, you will love it!)
Trays are oven and microwave friendly.
Microwave: Remove sleeve, cut film away from corner edge with knife, and remove. Place tray on microwave plate. Microwave for 2 minutes, then increments of 30 seconds until hot. Let stand for 2 minutes.
Based on a 1100 watt microwave oven.
Oven: Remove sleeve, cut film away from corner edge with knife, and remove. Place on oven sheet pan. Heat on 350 degrees for 20 - 25 minutes until hot. Heat to 165 degrees. Remove tray on pan, do not lift tray by itself. Let stand for 2 minutes.
DO NOT ATTEMPT TO LIFT TRAY BY ITSELF. LIFT TRAY ON MICROWAVABLE PLATE OR OVEN-ABLE PAN. USE HOT PADS TO REMOVE.
