Embracing the spirit of Texas, we've reimagined the famous enchiladas with a 5-star twist, featuring succulent braised beef that takes this Mexican classic to unprecedented heights. At the heart of this recipe is our house-made guajillo sauce, meticulously crafted to perfection, to bring magnificent flavors to every layer of this dish. We begin by toasting mild chilies alongside garlic, shallots, and the finest avocado oil, infusing every element with depth and complexity. Blended to velvety smoothness, we enhance the sauce with fresh vine-ripe tomatoes, fragrant cumin, mild chili powder, vine-ripe tomato sauce, a bouquet of fresh herbs, and our signature blend of house seasonings. Each corn tortilla is coated with an irresistible paste of guajillo, garlic, and shallots and rolled with slow-cooked, tender shredded Mexican flavored chuck steak. These enchiladas are generously loaded, flavorful, and crowned with our exquisite sauce. Accompanying this culinary masterpiece is our fragrant confetti rice, a delightful medley of rice with a colorful array of vegetables: zucchini, carrots, onions, and fresh Mexican herbs. These fresh veggies add vibrancy and texture to every forkful. In addition, this dish is served with fiesta black beans, also known as "Cowboy Cavier".  A delightful recipe of black beans, pico de Gallo, corn, sweet peppers, cilantro, green onions, garlic, fresh herbs and a hint of lime juice. Trays are oven and microwave friendly. Remove Condiments and Sauce containers.
Microwave: Remove sleeve, lift the corner of film, place on microwave plate, microwave for 2 minutes or until hot, cut film away from corner edge with knife, and remove. Let stand for 2 minutes. Based on a 1100 watt microwave oven. DO NOT LIFT TRAY, LIFT ON MICROWAVABLE PLATE 
Oven: Remove sleeve, cut film away from corner edge with knife, and remove. Place on oven sheet pan. Heat on 350 degrees for 20 - 25 minutes until hot. Heat to 165 degrees. Remove tray on pan DO NOT ATTEMPT TO LIFT TRAY BY ITSELF. LIFT TRAY ON MICROWAVABLE PLATE OR OVEN SAFE PAN. USE HOT PADS TO REMOVE.
