Fajita Steak Quesadillas with Queso

The best quesadillas you have ever had at a Tex-Mex spot, made even better at home.

We marinate skirt steak overnight to build deep, savory flavor all the way through, then dice it and load it into three grilled flour tortillas alongside house-made pico de gallo and a melted Mexican cheese blend. Served with our house queso for dipping and a salsa packet on the side for a complete, no-fuss plate.

Oven: Remove sleeve, cut film away from corner edge with knife, and remove. Place on oven sheet pan. Heat on 350 degrees for 20 - 25 minutes until hot. Heat to 165 degrees. Remove tray on pan DO NOT ATTEMPT TO LIFT TRAY BY ITSELF. LIFT TRAY ON MICROWAVABLE PLATE OR OVEN SAFE PAN. USE HOT PADS TO REMOVE.

Microwave: Remove sleeve, lift the corner of film, place on microwave plate, microwave for 2 minutes or until hot, cut film away from corner edge with knife, and remove. Let stand for 2 minutes. Based on a 1100 watt microwave oven. DO NOT LIFT TRAY, LIFT ON MICROWAVABLE PLATE

For best results: Add one tablespoons of oil to a non stick pan. Heat on medium until crisp. Turn Quesadillas over after approximately five minutes to crisp second side.

Oh my! These were great. Better than my favorite Mexican restaurant. The meat was so tender and my Hubs even said that they were delicious - that's telling because he doesn't usually like steak fajita meat.
